Recipes for One

My husband is going to be gone at basic and AIT for the next 7 months so I'll be cooking for just me. What do you all cook for just yourselves? How do you keep from overcooking every night? Do you have fun with cooking, finding new recipes to keep busy or just quick meals?

When my husband was away I cooked like I always had and had left overs. It made the nights that I didn't wanna cook nice.
