I've done bacon, spinach, garlic, roasted peppers, spanish onions, and then for cheese I do either gorgonzola, feta, gouda, or smoked provologne.

Save yourself a little bit of PITA and by the butterflied chops as opposed to the thick cut, bone in chops. They are just easier to work with. Toothpicks work fabulously at holding the stuffed chops closed during cooking, just be sure to pull what you need out ahead of time so you don't contaminate the box with raw meat germs.
There is this company called Stove Top that I hear makes a product that can be stuffed into meat. Seriously, they have a pork flavored variety that I often use; when I'm not so hurried I make my own stuffing using bread crumbs, sauteed onions, and whatever else sounds good.

I love this recipe:
http://somethingfordinner.blogspot.c...ork-chops.html I also inject apple juice into the pork with a meat injector. Yum! |

I agree with buying the butterflied chops and injecting the meat. I usually stuff mine with a mixture of thyme, garlic and pepper and some prosciutto. Sometimes I add Provlone, just like how I make my Stuffed Grilled Flank Steak and it turns out good too.
